I would REALLY like to invert the matrix option -

for example: the left hand column would be stable, where I would put the headers, then be able to add columns, rather than add rows. So, basically, I would add a column across the top, such as the date, and then be able to fill in the remaining column per the designated category on the left. And I'd like to be able to scroll across rather than down.
